The Val Venosta, Val d'Adige, South Tyrol is one of the top locations for mountain bikers. Due to the up to 3000m high mountains it is here even sunny when the rest of Europe is drenched with rain.
Here are my favorites for a long mountain weekend, the Vinschgau Cross, a 4-day tour.

Day 1, San Valentino - Laces
1500 Hm, 2300 Tm, 54 Km, about 6 hours. Skills: Mostly moderate
Parking in San Valentino, the first village below the lake Reschen. First, ride a bit on the western side of the valley Adige and up to 1700m above Burgusio. Dream trail from the lake above Burgusio! Across the valley down to the Sentiero del Sole an old irrigation channel with small bridges. Above Sluderno then the absolute highlight: The Leitenwaal, Bergwaal and Griggwaal by mountain bike! Enough altitude for that day, follow the Val d'Adige cycle path to Laces.
